Two-tone peppermint bark

This bark has become a mainstay of the holidays for me. I even get requests for it! I make sure to include a bag of bark in all my gifts to my friends. It is also a great idea as a hostess gift or for a potluck.

 


Ingredients

1 packet white chocolate chips (get good quality ones)
1 packet dark chocolate chips
Peppermint essence
Red and white candy canes
Vegetable oil (optional)


Directions
1) Melt the dark chocolate in a double boiler, stiring gently. Add a teaspoon of the oil to keep the shine on the chocolate.
2) Once the chocolate is melted, add a couple of drops of the peppermint essence and stir
3) Pour the chocolate onto a cookie tray lined with parchment paper. Make sure it is as smooth as possible.
4) Refrigerate until the chocolate has set.
5) Crush the candy canes using a blender or put them in a ziplock bag and use a rolling pin.
6) Once the dark chocolate is hard, melt the white chocolate using step 1.
7) Pour the white chocolate over the dark layer as quickly as possible.
8) Use a spatula to make sure the chocolate is as flat as possible.
9) Sprinkle the crushed candy cane over the white chocolate.
10) Leave the bark to harden.
11) Score lines in the bark with a knife before the chocolate is completely hard. Then break off the squares.
12) Present in a holiday tin or bag with a candy cane!

Winter Wonderland Wedding

Last weekend I had the pleasure of coordinating a Christmas themed wedding. Aside from the obligatory Christmas tree in the reception hall, there were tons of great festive touches which added to the day.




First off - signature drinks - Peppermint Kiss and Mistletoe with snowflake holders:




The placecard holders were tiny ornaments and the "guestbook" was a wishing tree.
